Fall has officially begun! Which means we are one step closer to cooler weather and the holidays! Fall is my favorite time of year. The leaves are changing, the weather is cooling off, and most importantly it is the biggest time of the year for family recipes!
Two of my favorite recipes for the fall are stuffed turkey breast and a pumpkin roll. Below you will find my personal recipes and how to’s for these two items.
Stuffed Turkey Breast:
This is something that we make every year and it is a big hit!
- 3-5 lb Turkey Breast (I use Butterball normally)
- 1 package of Jimmy Dean hot sausage
- 1 box of your preferred stuffing mix (I use Pepperidge Farms Herb Seasoned) or if you would prefer to make homemade stuffing you can certainly do that. If you do share your recipes I would love to hear them.
- 1/2 cup of diced onion
- 1/2 cup diced celery
- 1 package of maple bacon (or bacon of your choice)
- Salt and Pepper to taste
Once you have all of the ingredients you are ready to rock! Mix together uncooked sausage, onions, celery and stuffing in one bowl. Once you have that taken care of you can slice open the turkey breast, cut it in half, or cut it any way you see fit. Stuff the turkey with the stuffing and then wrap it in bacon. I like to use butcher’s string to tie it all together but you can use aluminum foil or whatever your heart desires. Once you have it wrapped and ready to go cook it to the time and temperature according to the package because the weight and time can vary. This is a great meal for thanksgiving of course however as soon as fall hits this is one of the main dishes I get excited about!
This pumpkin roll recipe is a mix where old meets new. I have taken my great grandmothers recipe and added my own twist.
- 1 cup Sugar
- 3/4 cup sifted flour
- 1 tsp ground ginger
- 1 tsp pumpkin pie spice
- 2 tsp Cinnamon
- 1 tsp baking powder
- 1 cup chopped pecans (optional)
- 3 eggs
- 2/3 cup canned pumpkin
- 2 tsp vanilla extract
- 2 tbs milk
Pre-heat oven to 375. Combine and whisk together all of your dry ingredients and set aside. Whisk together your wet ingredients and slowly combine the wet with the dry. Once well-mixed pour onto a greased cookie sheet and bake for 12-15 minutes.
While your cake is baking you can make the delicious filling.
- 2 blocks of cream cheese
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 cup heavy whipping cream
- 1/4 cup powdered sugar
Combine all ingredients and beat together until smooth peaks form and set aside. I prefer my filling to be room temperature because it is easier to spread.
Once your cake is out of the oven and cooled, spread your filling and then slowly roll. refrigerate for an hour and enjoy!
