Refreshing Summer Dinner!

    Let’s take a change of pace. We have been talking about everything housing lately which is great, but it

    is time for something yummy and fun. Grilled Chicken Topped With Bruschetta and a Spinach Salad with Balsamic Dressing

     

    You want to start with the bruschetta first so that the flavors can come together. I prefer to make my

    bruschetta the night before. Ree Drummond is by far my favorite Chef. I use her recipe for bruschetta,

    and it always tastes amazing!

     

    Pioneer Woman’s Bruschetta:

    Ingredients

    4 tablespoons olive oil

    5 cloves garlic, finely minced

    1 pint red grape tomatoes, halved lengthwise

    1 pint yellow grape tomatoes, halved lengthwise

    1 tablespoon balsamic vinegar

    16 whole fresh basil leaves, plus more as needed, chiffonade

    Salt and freshly ground black pepper

    1 whole baguette or crusty loaf

    1 stick butter

    Directions

    In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a

    minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a

    mixing bowl and allow to cool slightly.

    Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to

    combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!)

    Cover and refrigerate for an hour or two if you have the time.

     

    Baked Chicken:

    The Bake Chicken is one of my recipes. It is so simple and delicious.

    Ingredients

    4 Chicken Breast

    ¼ Cup Olive Oil

    2 tablespoons of pepper

    1 tablespoon garlic powder

    1 teaspoon of salt

    Preheat oven to 350. Place all 4 chicken breast in a 9×11 baking dish. Sprinkle each seasoning all over the

    chicken, top with the olive oil and cover with aluminum foil. Bake for 20 minutes. Remove the foil and

    bake for an additional 15 minutes.

     

    Spinach Salad:

    The wonderful thing about making salads is that you can add only the ingredients you enjoy and the

    salad will taste delicious. The recipe below is how I like to make my salads.

    1 can mandarin oranges

    1 lb. of pecans

    1 diced tomatoes

    1 diced red onion

    1 bag of salad spinach

    1 cup of the balsamic dressing of your choice

    I toss all of my ingredients in a bowl (including the dressing) and enjoy! It is delicious!

     

    After you have completed all the steps for each recipe, it is time to plate your meal and ENJOY!!
